Soups n Salads

Here are recipes shared by TN Ganesh – my friend who is an ardent Nature Curist

Soups 

1.     Tomato Soup 

8 medium size tomatoes  

1/4 cup bottle gourd 

1/4 cup potato 

1/4 cup carrot 

1/4 cup red/ green  capsicum 

1/2 tsp dry rosemary 

1/2 tsp dey Oregon 

1/4 tsp pepper 

3/4 tsp salt 

1 .1/2 cup water

Dip the tomato in hot water for 15 min . Cover with a lid. After 15 min peel the skin and take out the seedy part from inside. In a pan add all the veg . Cover the pot and let it boil for 15 min. Add all the vegetables and deserted tomato’s and rosemary . blend it smooth . Mix salt , pepper, oregano. Serve it hot

 

2.     Peas and carrot Soup 

1 cup -peas

1 cup – carrot

 1/2 – chopped potato 

Bay leaves-2

1/2 inch ginger 

2tsp – lemon juice 

Salt 

3 cups water 

For steaming ( which is used as topping)

1/2 cup steamed pea

1/2 cup carrot

1/4 chopped coriander 

In a pan boil all the vegetables, add bay leaves , ginger to it . Remove the bay leave and purée all the veg. Add lemon juice ( optional) , salt. Add the steamed veg as topping . Have it hot ….

 

3.     Cauliflower Soup 

2 cup cauliflower 

1 cup water

1 cup coconut milk 

Salt

Pepper 

Lemon juice 

 Masala

1-1/2 tsp coriander powder( Malli podi )

1/2 tsp keera powder 

1/2 tsp turmeric powder 

1 inch ginger 

Green chilly -1

Topping ( steamed )

1/4 cup broccoli 

1/4 cup coriander 

Put all the veg and masala in the pan. Once boiled cool it and blend it. Add the coconut milk while serving. Add the topping and have it hot …..

 

4.      Spinach Potato Soup

1/2 kg spinach 

3 cup water

3/4 cup potato 

2 1/2 tsp salt1/2 tsp pepper 

1/2 cup coconut milk 

In a pan add water -spinach – potato- pepper. Cool it down and blend it. Add coconut milk while serving .

 

5.     Palak Soup: (For 3 members)

Palak…2 kattu/ bundle

Onion..1

Potato…1

Garlic….2 pallu/cloves

Pepper,  jeera and salt  to taste.. 

(Ginger..optional)

Topping: Boiled cauliflower..1 cup

Pressure cook all d items…for a whistle or two.. Remove its  water and can be added later.. Keep aside for them to cool.. Grind it in a mixer.. Add d left over water and the topping(s), just boil it for a mt or 2… Add salt..to ur taste at the end..

Basic dressing- tomato , coriander & coconut 

Ash gourd ,green gram sprouts, Basic dressing 

Ridge gourd ,green gram sprouts, Bd

Cucumber , carrot , green gram sprouts,bd

Ash gourd , carrot , green gram sprouts, Bd

Beetroot, peanut sprouts,cucumber,bd

Beetroot, cucumber, carrot, bd

Zucchini, cucumber, Palak , bd 

Yellow pumpkin, carrot , cucumber, bd 

Chow chow , cucumber , capsicum, bd

Cucumber, palak and bsd

Gourd, capsicum and bsd..

Gourd, chow chow, carrots and bsd

Cucumber ladies finger and carrot with BSD

Lettuce/ cabbage, cucumber, carrots, any  sprouts and bsd

Cabbage , beetroot, ridge gourd, capsicum, bsd 

Yellow pumpkin, carrot , soaked nuts 

Red capsicum, carrot, cucumber, bsd

Cabbage,capsicum,beetroot,carrot,tomato : dip( soaked peanut-2tbsp,chilly-1, coriander) grind it  and mix with salad…
